Introduction

 The population is over 10.586 million. The majority of the Hui people live in the Ningxia Hui Autonomous Region. Many others reside in provinces such as Gansu, Qinghai, Henan, Hebei, Shandong and Yunnan. Their habitation areas vary in size. On the whole, the distribution of the Hui people is wide in the form of small-scale concentration with wide dispersion. The Hui ethnic group is China’s most widely distributed ethnic minority. For a long time they live with the Han people, so they use Chinese as their written and spoken language. The Hui people who live with other ethnic groups are able to use the languages of those groups, and some Hui people understand Arabic and Persian. The Hui people have reached a high level of economic development. They are mainly engaged in agricultural production while they are also involved in handicraft industry and animal husbandry. Since they have their special dietary habit, the Hui people living in urban areas have a tradition of running restaurants for business. The Hui people believe in Islam which is the source of their two major festivals “Eid al-Fitr” and “Kurban Bairam”.
